Really wanted a healthy 7 layer bean dip but decided to add shredded chicken and make it a meal :) It's delish! Super easy to make!

Ingredients

  • 2 cans refried beans
  • 1 pound chicken breasts, boneless and skinless
  • 1 can chopped tomatoes, onions and green chilies
  • 1 jar medium salsa
  • 2 - avacadoes and guacolome seasioning pack mixed
  • 1 cup low fat sour cream
  • 2 packages taco seasoning mix
  • 2 cups low fat mexican shredded cheese
  • 1/2 - shredded lettuce
  • 1 - chopped tomatoe
  • 1/2 can sliced black olives
  • 1/2 can pickled jalapeno
  • 2 packages tortilla chips

How To Make pickels chicken fiesta casserola

  • Step 1
    2 cans re-fried beans heated up in a skillet then smeared on the bottom of the dish
  • Step 2
    chicken breast boiled in 1 cup of water and taco seasoning pack then shredded with the blender smeared on the beans
  • Step 3
    1 jar medium salsa and 1 can chopped tomatoes,onions and green chilies on the chicken
  • Step 4
    guacamole on the salsa
  • Step 5
    1 cup sour cream blended with taco seasoning pack smeared on the guacamole
  • Step 6
    2 cups low fat Mexican shredded cheese on the sour cream
  • Step 7
    then shredded lettuce, tomatoes, black olives and jalapenos
  • Step 8
    refrigerated then served on TORTILLA CHIPS
