Penne Pasta, Chicken, Spinach, Tomatoes with Balsamic Vinaigrette
1 box14.5 oz whole wheat pasta
1 lbchicken breast, diced
1/2 colive oil, extra virgin (divided)
1/4 cbalsamic vinegar
2 tspdijon mustard
·salt and pepper, to taste
2 1/2 cfirmly packed fresh spinach, chopped
2 1/2 cchopped fresh tomatoes
1/2 cthinly, sliced red onion
1/2 cdiced yellow pepper
How to Make Penne Pasta, Chicken, Spinach, Tomatoes with Balsamic Vinaigrette
- Saute chicken in 1 Tbsp olive oil in a med skillet for 5 to 6 min or until done.
- Whisk together the vinegar and mustard in a small bowl. Gradually whisk in 6 Tbsp olive oil until smooth. Season with salt and pepper to taste.
- Cook Pasta according to package, drain. Toss together pasta,chicken, vinegar mix, spinach, and remaining ingredients in a large bowl. Season with salt and pepper. Serve hot or cold!
