penne pasta, chicken, spinach, tomatoes with balsamic vinaigrette

Hello my name is Leah and I'm addicted to balsamic vinegar. I think I might have a little problem. I don't post too many healthy recipes on here but this one is too good not to share. This makes a big bowl of pasta and you would think that it could serve about 8 adults but we all got seconds so there for it only served 4. Pair it with some garlic bread and you have a great meal!

Ingredients

  • 1 box 14.5 oz whole wheat pasta
  • 1 pound chicken breast, diced
  • 1/2 cup olive oil, extra virgin (divided)
  • 1/4 cup balsamic vinegar
  • 2 teaspoons dijon mustard
  • - salt and pepper, to taste
  • 2 1/2 cups firmly packed fresh spinach, chopped
  • 2 1/2 cups chopped fresh tomatoes
  • 1/2 cup thinly, sliced red onion
  • 1/2 cup diced yellow pepper

How To Make penne pasta, chicken, spinach, tomatoes with balsamic vinaigrette

  • Step 1
    Saute chicken in 1 Tbsp olive oil in a med skillet for 5 to 6 min or until done.
  • Step 2
    Whisk together the vinegar and mustard in a small bowl. Gradually whisk in 6 Tbsp olive oil until smooth. Season with salt and pepper to taste.
  • Step 3
    Cook Pasta according to package, drain. Toss together pasta,chicken, vinegar mix, spinach, and remaining ingredients in a large bowl. Season with salt and pepper. Serve hot or cold!
