The first time I made this recipe, I immediately loved it & so did my husband. This version is healthier than the original.

Ingredients

  • 6 - chicken breast halves, skinless and boneless
  • 3/4 cup bread crumbs, whole wheat
  • 3 tablespoons wheat flour
  • 3 large eggs
  • 1/4 cup pecans,coarsely ground
  • 1/8 teaspoon sea salt
  • 1/8 teaspoon black pepper

How To Make pecan crusted chicken

  • Step 1
    Preheat oven to 375. Grease a 13X9 sheet pan with vegetable spray.
  • Step 2
    Combine breadcrumbs, pecans, sea salt, & black pepper in a small bowl. Whisk eggs in another small bowl. Put flour in third small bowl. Place chicken in flour, then eggs, then breadcrumb mix. Place chicken on greased sheet pan.
  • Step 3
    Cook chicken 15 minutes. Turn at halfway point. If not done after 15 minutes, cook another 10 minutes.
