Ingredients

  • 3/4 cup roasted peanuts, salted
  • 1/2 cup panko bread crumbs
  • 1/4 cup fresh cilantro, chopped
  • salt & pepper to taste
  • 2 8-oz. boneless, skinless chicken breasts, cut crosswise into 24 thin strips
  • 3 tablespoons vegetable oil
  • 1/2 cup mayonnaise
  • 1-2 teaspoon asian chili-garlic sauce

How To Make peanut-crusted chicken skewers with dipping sauce

  • Step 1
    In a shallow dish, combine the peanuts, bread crumbs, cilantro and 1/2 tsp salt & pepper.
  • Step 2
    Soak wooden skewers in water to prevent burning. Thread each chicken strip onto a skewer and then coat each strip in peanut mixture pressing gently to help the coating adhere.
  • Step 3
    Heat the oil in a large nonstick skillet over medium-high heat. Cook in batches until golden brown - approx. 2-3 minutes per side. Add more oil as needed. Transfer cooked chicken to a plate.
  • Step 4
    In a small bowl, combine the mayonnaise and chili-garlic sauce. Serve as a dipping sauce for the chicken.
