Peachy Pork Stir Fry- goes Mexican
1 lbboneless pork, cut in bite size pieces
1 Tbsptaco seasoning, more or less
2 Tbspvegetable oil
8 ozbottle chunky-style salsa
1 smallred bell pepper, cut in thin strips
1/3 cpeach preserves
1/4 cpineapple juice , apple cider , orange juice or water
4 ccooked rice(i like jasmine)
1 Tbspchopped chives
1/8 tspsesame seeds

- Place pork pieces in a bowl; sprinkle taco mix over and toss well to coat all- use a little more if you like.Spray skillet with non-stick spray- then heat oil in a large skillet; over medium-high heat add pork pieces and cook to brown, stirring occasionally.
Add salsa, pepper slices, juice and preserves to pan, lower heat. Cover and simmer for 10-15 minutes. Serve over prepared rice.
