I have had this quick and easy recipe for quite some time -so delicious- this will soon become your family stand by. Recipe works well with any seafood or other meats. Even Spam and Bologna .

Ingredients
- 1 pound boneless pork, cut in bite size pieces
- 1 tablespoon taco seasoning, more or less
- 2 tablespoons vegetable oil
- 8 ounces bottle chunky-style salsa
- 1 small red bell pepper, cut in thin strips
- 1/3 cup peach preserves
- 1/4 cup pineapple juice , apple cider , orange juice or water
- 4 cups cooked rice(i like jasmine)
- 1 tablespoon chopped chives
- 1/8 teaspoon sesame seeds

Step 1Place pork pieces in a bowl; sprinkle taco mix over and toss well to coat all- use a little more if you like. Spray large skillet with non-stick spray- then heat oil in the skillet; over medium-high heat add pork pieces and cook to brown, stirring occasionally. Add salsa, pepper slices, juice and preserves to pan, lower heat. Cover and simmer for 10-15 minutes. Serve over prepared rice. sprinle with chives and sesame.
