Ingredients
- 6 - boneless, skinless chicken breasts
- - olive oil
- 1 cup panko bread crumbs
- 1 cup grated parmigiano reggiano
- 2 tablespoons dried basil
- - salt & pepper
How To Make parmigiano panko herb encrusted chicken breasts

Step 1Trim fat from chicken breasts. Pound chicken breasts to about 1/4 inch thick.

Step 2Heat olive oil in skillet or electric fry skillet, enough to fry chicken (just enough to coat bottom of pan). In medium bowl, add panko crumbs, Parmigiano, basil and season with salt and pepper to taste. Press chicken into mixture and coat on both sides, shaking off excess.

Step 3Place chicken into frying pan and cook about 8 minutes each side or until cooked through. 12 points per serving
