This is a weight watchers recipe, but the whole family loved it. It's 3 points a serving if you're counting.

  • 2 Tbsp
    orange juice
  • 2 Tbsp
    dijon mustard
  • 1/2 tsp
    reduced-sodium soy sauce
  • 3/4 c
    whole wheat cracker crumbs
  • 1 Tbsp
    grated orange zest or lemon juice
  • 1/4 tsp
    onion powder
  • 1/4 tsp
    ground pepper
  • 4
    3 ounce skinless boneless chicken breasts

How to Make Orange-Crusted Baked Chicken


  1. Spray nonstick baking sheet with cooking spray.
  2. In a small bowl, combine OJ, mustard, and soy sauce.
  3. On a sheet of wax paper, combine cracker crumbs, orange jest, onion powder and pepper. Brush the chicken on both sides with mustard mixture, then dredge in the crumbs, firmly pressing the crumbs to coat both sides.
  4. Place the chicken on the baking sheet. Bake 15 minutes; turn over and bake until cooked through, 15-20 minutes longer.
