one-pan creamy spinach chicken

Don't let the longish list of ingredients scare you: you already have most of them in your pantry. This delicious chicken is good enough to serve to company, uses only one pan, and is ready in less than 30 minutes!

Ingredients For one-pan creamy spinach chicken

  • 2 lbs
    boneless chicken breasts and/or thighs
  • 2 tsp
    paprika
  • 2 Tbs
    olive oil
  • 3 Tbs
    butter
  • ½ cup
    chopped onion
  • 8 oz
    sliced fresh mushrooms (or 4 oz can, drained)
  • 2-3 tsp
    minced garlic (2 cloves, crushed)
  • 1½ oz
    sliced sundried tomatoes (optional)
  • 1 Tbs
    chopped fresh basil (or 1 tsp dried basil)
  • 2 tsp
    corn starch
  • 2 cups
    chicken broth (or 2 cups water plus 3 tsp chicken bouillon)
  • 1 cup
    heavy cream
  • ¾-1 cup
    grated parmesan cheese
  • 6-8 oz
    fresh spinach
  • 12 oz bag
    egg noodles, prepared (optional)

How To Make one-pan creamy spinach chicken

    Cut breasts in half, and pound thicker pieces to a half-inch thickness. Dust the chicken with paprika, and brown in oil over medium-high heat for 3-5 minutes on each side, until done (do not overcook.) Remove from the pan, and set aside.

    Add butter to the pan, and saute the onions and mushrooms until tender; add the garlic, tomatoes, and basil in the final minute.

    Stir the cornstarch into the chicken broth, and add to the pan along with the heavy cream and Parmesan cheese. Increase heat and simmer, stirring, until slightly thickened. Add the spinach and stir until wilted. Return the chicken to the pan and spoon the sauce over the top.

    Serve as is, or over egg noodles.
