Ingredients
-
1 lbchicken breasts, boneless and skinless
-
2 Tbspolive oil, extra virgin
-
1 mediumcooking onion
-
1green pepper, diced
-
28 ozcan diced tomato
-
1 cfresh sliced mushrooms
-
1 cfresh diced carrots
-
1 smalljar green olives w/ pimentos, roughly chopped
-
·salt, pepper and garlic powder, to taste
How to Make Olive Chicken
- Season chicken with salt and pepper. Saute in olive oil until outside is no longer pink. Remove chicken from pan.
- In the same pan, add onion, green pepper and carrots and saute til softened. Add in mushrooms and can diced tomato. Simmer about 5 minutes. Add olives and chicken back to pan and simmer til chicken is no longer pink.
- Best served with brown rice but also yummy with white rice or egg noodles!
