I am hoping you will enjoy this subtly flavoured dish. It is quick and easy to make, producing a moist, tender, crispy piece of chicken. This dish is very versatile. We prefer it with skin and bone but it is also good with boneless and skinless. The choice is yours. Please note: the time listed is for skin and bone. Make as written for a subtle flavor or add any of the following ingredients: thinly sliced shallots, finely minced sweet onion, fresh lemon juice or rind, red pepper flakes, finely minced candied ginger or fresh herbs to make it taste bolder. Add as many as desired.

Ingredients For oh honey! chicken

  • 2/3 c
    butter, softened
  • 1 c
    wildflower, clover, or orange blossom honey
  • 1/2 c
    Dijon mustard
  • 1 - 2 tsp
    finely minced garlic, optional
  • 1/8 tsp
    cayenne pepper, optional
  • 1/2 - 1 tsp
    sea salt
  • 1/4 - 1/2 tsp
    freshly ground black pepper
  • 4
    chicken breasts or 8 chicken thighs

How To Make oh honey! chicken

    Preheat oven to 375 degrees F.

    In a 9" x 13" dish, combine the butter, honey, mustard, garlic, cayenne, salt and black pepper. Place the pan in the oven to melt the butter. Once the butter is melted remove the pan from oven and mix well.

    Roll the chicken pieces in the butter mixture. Place the chicken, skin side down in the pan and bake for 45 minutes. Basting every 15 minutes with the sauce.

    After 45 minutes, turn the chicken over, baste, and bake 20 minutes more until crispy.

    Terrific served with rice or pasta and a green salad.
