my favorite cornish hens & wild rice
I've been making this recipe for years. It is a wonderful dish that your family will love. Each hen half gets a lovely bed of delicious rice to accompany it and all you need is a side salad or green vegetable to complete your dinner. Definitely Company Worthy. : )

Ingredients
- 1 box 6 oz. box long grain and wild rice
- 1 envelope italian salad dressing mix
- 2 12 cups boiling water
- 1 can 10.5 oz. can cream of chicken soup
- 2 cornish hens, sliced in half lengthwise
- salt and pepper to taste
How To Make my favorite cornish hens & wild rice

Step 1Spread rice evenly in a 3 qt. baking dish - bake at 375 degrees for 15 minutes, stirring occasionally until golden.

Step 2Combine the dressing mix with the boiling water and soup. Stir mixture into the rice.

Step 3Place split cornish hens, cut side down, on top of rice. Cover dish tightly with foil and bake at 350 degrees for 1 hour.

Step 4Uncover the dish and bake an additional 30 minutes until the rice and hens are tender and brown.
