I've been making this recipe for years. It is a wonderful dish that your family will love. Each hen half gets a lovely bed of delicious rice to accompany it and all you need is a side salad or green vegetable to complete your dinner. Definitely Company Worthy. : )

Ingredients

  • 1 box 6 oz. box long grain and wild rice
  • 1 envelope italian salad dressing mix
  • 2 12 cups boiling water
  • 1 can 10.5 oz. can cream of chicken soup
  • 2 cornish hens, sliced in half lengthwise
  • salt and pepper to taste

How To Make my favorite cornish hens & wild rice

  • Step 1
    Spread rice evenly in a 3 qt. baking dish - bake at 375 degrees for 15 minutes, stirring occasionally until golden.
  • Step 2
    Combine the dressing mix with the boiling water and soup. Stir mixture into the rice.
  • Step 3
    Place split cornish hens, cut side down, on top of rice. Cover dish tightly with foil and bake at 350 degrees for 1 hour.
  • Step 4
    Uncover the dish and bake an additional 30 minutes until the rice and hens are tender and brown.
