- 2 tablespoons olive oil, extra virgin
- 1/2 teaspoon salt.
- 8 - good sized chicken thighs, skinned
- 1 - onion, chopped.
- 2 - 14 oz cans cannellini beans, drained.
- 1 - 28 oz can diced tomatoes, juice reserved.
- 2 tablespoons tomato paste, italian
- 1 tablespoon dried tarragon
- 2 teaspoons garlic powder
- 1/4 teaspoon red pepper flakes
How To Make moms pantry chicken.

Step 1In a 6-quart pot over medium heat, sprinkle chicken w/ salt and cook in pot for 20 min, turning occasionally. Add onion, saute 2 mins. Add remaining ingredients and mix well. Bring to a boil. Reduce heat to low and simmer 20 min, or until chicken is cooked through.
