mom's old time chicken & ritz casserole
This was a staple in our house when I was growing up. We were quite poor & so these kinds of casseroles were a mainstay because of the low cost, since they could feed many on little. But they DID taste so good & that's why I now make them, poor or not!

Ingredients
- 1 stick melted butter
- 1 cup ritz crackers, crumbled
- 3 - chicken breasts, boneless and skinless
- 8 ounces sour cream
- 1 can cream of chicken soup
- - salt & pepper to taste
- 1-1/2 cup frozen peas
- 1/4 cup chicken broth
- 1 box penne pasta
How To Make mom's old time chicken & ritz casserole

Step 1heat oven to 350. Pour melted butter in bottom of casserole dish. Sprinkle 1/2 cup of the Ritz cracker crumbs over butter. In medium pot, boil pasta until almost done, drain.

Step 2Place chicken breasts over the butter and crumbs. Spoon pasta over chicken. Season chicken and pasta w/ salt & pepper. Pour frozen peas over chicken.

Step 3In medium size bowl, whisk sour cream, soup and broth until combined. Pour over chicken. Sprinkle remaining Ritz cracker crumbs over chicken. Bake 1 hr or until bubbly.
