    chicken drumsticks
  • ·
    for the marinade:
  • 5 clove
    garlic,crushed
  • 1 c
    grapefruit juice
  • 1 c
    fresh orange juice
  • 1 c
    lime juice
  • ·
    other ingredients for sauce:
  • 1/4 c
    olive oil
  • 1 md
    onion
  • 8 c
    tomato sauce
  • 1
    bay leaf
  • 1 c
    good white wine
  • 2 c
    chicken base
  • 2 c
    uncooked rice
  • 1 c
    frozen peas
  • ·
    salt and pepper

How to Make Mom's Citrus Chicken with Rice

Step-by-Step

  1. Marinate the chicken for 4 hours or over night.Drain the chicken and reserve the marinade.
  2. In a Dutch oven or large pan brown the chicken on olive oil. Add onion and 1 cup of the marinade including the garlic.
  3. When the onion is soft, add tomato sauce,spices,bay leaf, and wine.Add chicken broth,cover, and simmer for 30 minutes on low .
  4. Add washed rice and simmer occasionally for another 30 to 45 minutes until the rice absorbs all of the liquid and is soft.Stir in thawed peas.
