Ingredients
- 6-8 - chicken drumsticks
- - for the marinade:
- 5 cloves garlic,crushed
- 1 cup grapefruit juice
- 1 cup fresh orange juice
- 1 cup lime juice
- - other ingredients for sauce:
- 1/4 cup olive oil
- 1 medium onion
- 8 cups tomato sauce
- 1 - bay leaf
- 1 cup good white wine
- 2 cups chicken base
- 2 cups uncooked rice
- 1 cup frozen peas
- - salt and pepper
How To Make mom's citrus chicken with rice

Step 1Marinate the chicken for 4 hours or over night.Drain the chicken and reserve the marinade.

Step 2In a Dutch oven or large pan brown the chicken on olive oil. Add onion and 1 cup of the marinade including the garlic.

Step 3When the onion is soft, add tomato sauce,spices,bay leaf, and wine.Add chicken broth,cover, and simmer for 30 minutes on low .

Step 4Add washed rice and simmer occasionally for another 30 to 45 minutes until the rice absorbs all of the liquid and is soft.Stir in thawed peas.
