chicken drumsticks
for the marinade:
5 clove
garlic,crushed
1 c
grapefruit juice
1 c
fresh orange juice
1 c
lime juice
other ingredients for sauce:
1/4 c
olive oil
1 medium
onion

tomato sauce

bay leaf

good white wine

chicken base

uncooked rice

frozen peas

How to Make Mom's Citrus Chicken with Rice

Step-by-Step

  • 1Marinate the chicken for 4 hours or over night.Drain the chicken and reserve the marinade.
  • 2In a Dutch oven or large pan brown the chicken on olive oil. Add onion and 1 cup of the marinade including the garlic.
  • 3When the onion is soft, add tomato sauce,spices,bay leaf, and wine.Add chicken broth,cover, and simmer for 30 minutes on low .
  • 4Add washed rice and simmer occasionally for another 30 to 45 minutes until the rice absorbs all of the liquid and is soft.Stir in thawed peas.
