- 1 large chicken
- 1 small onion, quartered
- 1 stalk celery
- 1 1/2 sticks butter, divided
- 2 cups boiling water
- 2 cups sifted flour
- 1 teaspoon salt
- 4 eggs
- 1/4 - 1/2 cup flour
How To Make mom's chicken & dumplings

Step 1Cook chicken in water seasoned with onion and celery until tender - save broth. When cool, debone and cut into bite size pieces. Set aside.

Step 2To make dumplings, melt butter in the boiling water. Add salt to sifted flour. Add flour mixture to boiling water. Stir and cook until mixture leaves the side of the pan - doesn't take long. Cool slightly and then add eggs one at a time - stir well after each addition.

Step 3Pat dough out in thirds with floured hands and roll out with a rolling pin. Cut dough into strips, about 1-2 inches.

Step 4Meanwhile remove the onion and celery from the broth and chop - return to broth. Next, make a slurry with the 1/4-1/2 cup flour and 1/2 cup water in a jar with a tight-fitting lid. Shake well until all lumps disappear. Pour into hot broth, stirring constantly until thickened slightly. Add chicken into hot broth.

Step 5Drop dough strips into boiling broth and cook until done -- doesn't take long.

Step 6Sprinkle with parsley (optional) and serve.
