Ingredients
- MOJO SAUCE
- 1/2 cup olive oil
- 8 large cloves garlic, cut into thin slices
- 2/3 cup orange juice, fresh & sour
- 1/2 cup water
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1 teaspoon salt (or to taste)
- 3 tablespoons fresh chopped cilantro
- MOJO CHICKEN
- 1 pound chicken wings, legs or thighs
- 1/2 cup mojo sauce
- 1 teaspoon garlic powder
- - salt & pepper to taste
How To Make mojo chicken

Step 1Mojo sauce: Heat oil in a deep sauce pan over medium heat. Add the garlic & cook until fragrant & pale golden brown, 1-2 minutes. Do not let garlic brown too much, it will become bitter. Stir in the sour orange juice, water, & dried spices. Sauce may spatter so be careful. Bring to a rolling boil, taste for seasonings adding salt & pepper as needed. Let Cool to room temp, then stir in fresh cilantro. (If not using sauce right away, transfer to a jar with tight fitting lid, store in fridge and shake well before serving).

Step 2Pour mojo sauce over chicken pieces and marinate in refrigerator for at least 4 hours. Drain excess sauce and add garlic, salt and pepper. Bake at 325 until chicken is done. Serve with rice (I save out a little sauce before marinating the chicken to pour over the rice).
