I love pecans, so I was wondering how chicken rolled in pecans would taste..they taste moist and fabulous!

Ingredients

egg, lightly beaten
1 c
ground or coarsely chopped pecans
3/4 c
bread crumbs
2 tsp
paprika
1/2 tsp
salt
1/8 tsp
pepper
1/2 c
flour
8
boneless, skinless chicken breasts
1/3 c
melted butter
1 c
buttermilk
1/4 c
chopped pecans

How to Make Moist pecan chicken

Step-by-Step

  • 1Heat oven to 350. Spray a lg rimmed baking sheet w/ cooking spray. In lg shallow dish or bowl, combine buttermilk and egg. In another shallow dish, combine 1 cup pecans, bread crumbs, paprika, salt and pepper.
  • 2Place flour in another shallow dish. Dredge each chicken breast in flour, dip in buttermilk mix, then roll in pecans to coat evenly.
  • 3Place chicken on baking sheet. Drizzle w/ melted butter. Sprinkle w/ remaining ecans. Bake, uncovered about 20 mins, or until juices run clear.
