1Heat oven to 375. Line rimmed baking sheet w/ foil, spray the foil w/ cooking spray. Sprinkle chicken w/ the salt.
2In lg skillet, over med-high heat,heat oil until hot. Cook chicken until browned, turning once. About 6 mins. Place chicken, skin-side up, on baking sheet, bake 10 mins.
3In bowl, whisk together hoisin sauce, vinegar, saoy sauce and ginger. Reserve 1/2 of sauce. Brush chicken w/ sauce and cook another 10 mins, or until juices run clear. Spoon reserved sauce over chicken. Sprinkle w/ scallions.
