Pan Fry


  • 2 Tbsp
    all purpose flour
  • pinch
    cayenne pepper
  • 2 Tbsp
    olive oil
  • 3 large
    chicken breast,thinly sliced
  • ·
    juice of 1/2 lemon plus 4 slices
  • 1/3 c
    pitted sliced kalamata olives
  • 1/3 c
    pitted green olives
  • 3 tsp
    fresh chopped italian parsley
  • 1/2 tsp
    kosher salt
  • 2 tsp
  • ·
    fresh pepper to taste
  • 2 large
    sliced cloves of garlic

How to Make Meditterean Chicken


  1. Combine flour & cayenne pepper and dredge chicken
  2. Heat olive oil on medium heat & place dredged chicken in hot skillet & cook until golden brown , about 3 min.
  3. Turn chicken over & add lemon juice, slices of lemon, garlic, olives, 1 1/2 TBS. parsley & salt & pepper
  4. Cook for 8-10 min., stirring occasionally so garlic won't burn
  5. Add butter to pan, shaking to combine the sauce
  6. Place chicken on a serving dish, pour olive mixture over the top
  7. Garnish with remaining parsley
