Meditterean Chicken
Ingredients

2 Tbspall purpose flour

pinchcayenne pepper

2 Tbspolive oil

3 largechicken breast,thinly sliced

·juice of 1/2 lemon plus 4 slices

1/3 cpitted sliced kalamata olives
-
1/3 cpitted green olives
-
3 tspfresh chopped italian parsley
-
1/2 tspkosher salt
-
2 tspbutter
-
·fresh pepper to taste

2 largesliced cloves of garlic
How to Make Meditterean Chicken
- Combine flour & cayenne pepper and dredge chicken
- Heat olive oil on medium heat & place dredged chicken in hot skillet & cook until golden brown , about 3 min.
- Turn chicken over & add lemon juice, slices of lemon, garlic, olives, 1 1/2 TBS. parsley & salt & pepper
- Cook for 8-10 min., stirring occasionally so garlic won't burn
- Add butter to pan, shaking to combine the sauce
- Place chicken on a serving dish, pour olive mixture over the top
- Garnish with remaining parsley
