Ingredients

  • 2 tablespoons all purpose flour
  • pinch cayenne pepper
  • 2 tablespoons olive oil
  • 3 large chicken breast,thinly sliced
  • - juice of 1/2 lemon plus 4 slices
  • 1/3 cup pitted sliced kalamata olives
  • 1/3 cup pitted green olives
  • 3 teaspoons fresh chopped italian parsley
  • 1/2 teaspoon kosher salt
  • 2 teaspoons butter
  • - fresh pepper to taste
  • 2 large sliced cloves of garlic

How To Make meditterean chicken

  • Step 1
    Combine flour & cayenne pepper and dredge chicken
  • Step 2
    Heat olive oil on medium heat & place dredged chicken in hot skillet & cook until golden brown , about 3 min.
  • Step 3
    Turn chicken over & add lemon juice, slices of lemon, garlic, olives, 1 1/2 TBS. parsley & salt & pepper
  • Step 4
    Cook for 8-10 min., stirring occasionally so garlic won't burn
  • Step 5
    Add butter to pan, shaking to combine the sauce
  • Step 6
    Place chicken on a serving dish, pour olive mixture over the top
  • Step 7
    Garnish with remaining parsley
