Ingredients
- 8 medium chicken thighs
- salt and pepper
- 1 1/2 pounds potatoes, cubed
- 1 pint grape tomatoes
- 10 ounces roasted red peppers, drained
- 1 teaspoon garlic powder
- 1 teaspoon basil, dried
- 1 teaspoon thyme, dried
- olive oil
How To Make mediterranian inspired chicken thighs

Step 1Rinse and pat dry chicken thighs. Season with salt and pepper to taste.

Step 2Heat roasting/baking pan and put a few tablespoons of olive oil in it. Sear chicken thighs skin side down until golden.

Step 3Flip chicken over and turn off the heat.

Step 4With chicken skin side up, add potatoes, peppers, garlic, oregano, and thyme. Drizzle with olive oil.

Step 5Bake your meal in 400 oven for 45 to 55 minutes or until chicken is done and potatoes are tender.
