mediterranian chickpeas with vegetables & chicken

This dish started out as a vegetarian delight. The chicken part is optional. :)

Ingredients

  • 1 tablespoon olive oil, extra virgin
  • 1 cup diced onions
  • 1 clove garlic
  • 1 19 oz cans chickpeas (drained, rinsed)
  • 2 cups rice
  • 2 teaspoons dried basil
  • 1/2 teaspoon sugar
  • 1/2 teaspoon black pepper
  • 1/4 cup parmesean cheese
  • 1/8 teaspoon salt
  • 2 - bay leaves
  • 1 28 oz cans diced tomato - undrained
  • 2 cups diced zucchini
  • 4-6 - boneless, skinnless chicken breasts. (optional)

How To Make mediterranian chickpeas with vegetables & chicken

  • Step 1
    On medium, heat oil til hot. Add onion and garlic. saute 3 minutes. Add basil, sugar, black pepper, salt, 2 bay leaves, tomatoes. Bring to a boil, then reduce heat to medium. Cook 5 minutes, stirring occasionally. Stir in chickpeas, and cook 3 minutes. Add zucchini, cover, and cook until zucchnini is tender. Discard bay leaves. Serve over chicken or rice.
  • Step 2
    If serving over chicken, cook the chicken, onion, and garlic before adding remaining ingredients. I usually just herb the chicken with some basil, salt and pepper. Cook til chicken is golden brown, THEN begin adding the chickpeas, basil, sugar, black pepper, (etc) and follow the recipe to conclusion.
