1On medium, heat oil til hot. Add onion and garlic. saute 3 minutes. Add basil, sugar, black pepper, salt, 2 bay leaves, tomatoes. Bring to a boil, then reduce heat to medium. Cook 5 minutes, stirring occasionally. Stir in chickpeas, and cook 3 minutes. Add zucchini, cover, and cook until zucchnini is tender. Discard bay leaves. Serve over chicken or rice.
2If serving over chicken, cook the chicken, onion, and garlic before adding remaining ingredients. I usually just herb the chicken with some basil, salt and pepper. Cook til chicken is golden brown, THEN begin adding the chickpeas, basil, sugar, black pepper, (etc) and follow the recipe to conclusion.
