1In resealable gallon bag combine oil, garlic, coriander and fennel seed to create marinade. With a sharp knife cut a pocket in chicken breast before placing in bag. Marinade in the fridge for 2 hrs or overnight.
2Combine the feta cheese, sun dried tomatoes and oil to make the filing. remove chicken from marinade and fill the pocket with feta mixture. Use toothpicks to secure mixture in the chicken breast.
3Place chicken on grill and cook until tender or 165F and is no longer pink. *****If you do not have a grill try a George Foreman or the oven at 375F for 35-40 minutes.
