Ingredients
- 1 cup brown rice, uncooked
- 3/4 pound boneless, skinless chicken breasts, cut into bite sized cubes
- 1/2 teaspoon black pepper
- 3 cloves garlic, minced
- 1 cup zucchini, cut lengthwise and sliced
- 1/2 pound sliced mushrooms
- 1/2 cup diced onion
- 1 can diced tomatoes with juice
- 1 cup chicken broth
- 1 tablespoon dried basil
- 1/2 teaspoon salt
- 1 tablespoon olive oil
How To Make mediterranean chicken

Step 1Cook rice following directions on the package.

Step 2Cook chicken in a large nonstick skillet, over medium high heat for about 4-5 minutes. Remove from pan.

Step 3Add oil and garlic to pan and saute for 30 seconds.

Step 4Next add zucchini, onion, and mushrooms and continue to cook for minutes.

Step 5Add tomatoes and chicken to the skillet. Add broth, basil and salt.

Step 6Bring to a boil, reduce heatl and simmer for 6-7 minutes.

Step 7Add the rice and mix together. Serve hot.
