Ingredients For lynn's smoked chicken breasts

  • *3 large or 4 medium bone in chicken breasts
  • 1/4 c
    mrs. dash's original blend
  • 1 tsp
    granulated garlic
  • 1/2 tsp
    granulated onion powder
  • 1/4 tsp
    paprika
  • 1 tsp
    black pepper
  • 2 Tbsp
    mccormicks montreal chicken seasoning
  • 1 tsp
    lemon juice
  • olive oil

How To Make lynn's smoked chicken breasts

    Mix dry spices in a bowl then add lemon juice and just enough olive oil to make a wet easily spreadable rub (about 1/4 c). Mix together well.

    Gently lift up skin on breast and apply rub then turn over and rub bone side. Then turn breast back over and pat skin dry with a paper towel and rub with mix.

    We use a wood smoker and mesquite so I can only give instructions for that type of smoker, and time can still vary depending on temp. Smoke skin side down for about 2- 2 1/2 hrs at 300º then flip to skin side up and smoke another 1- 1 1/2 hrs till chicken reaches 165 ° internal heat. I used a water pan in my smoker.

    NOTE: Best to check temp of chicken with digital meat thermometer after about 2 hrs when you flip it, that will give you a good idea of how much longer to smoke it. TIP: I hate losing juices from sticking my food with a thermometer so I stick a toothpick in the same hole I take my thermometer out of, it really helps keep those juices in.
