Ingredients

  • 1/4 cup chopped onion.
  • 20 ounces boneless, skinless chicken thighs, cut into 3/4"-pieces.
  • 1/8 teaspoon cayenne pepper.
  • 1 - 12 oz container, low-fat cottage cheese.
  • 1-1/2 cup light sour cream
  • 1/2 cup reduced-fat grated parmesan cheese.
  • 2 tablespoons all-purpose flour
  • 2 cups uncooked, no-yolk noodles.
  • 1 cup frozen sweet peas, thawed.
  • 2 tablespoons chopped fresh chives.

How To Make low-fat, slow-cooked chicken romanoff

  • Step 1
    Spray a 4-quart slow-cooker w/ cooking spray. Mix onion, chicken and cayenne pepper in cooker. In lg bowl, mix cottage cheese, sour cream, parmesan cheese and flour. Pour over chicken. Cover, cook on low for 5 hrs. Stir mix. Stir in noodles and peas. Increase heat to high. Cover, cook 30 min, or until noodles are tender. Top w/ chopped chives.
