I wanted a chicken salad w/out all the mayonnaise, so I came up w/ something a little different!

Ingredients

  • 3 - boneless, skinless chicken breasts
  • 1/ 16 oz packages whole wheat small pasta shells.
  • 1 cup bbq sauce
  • 1 cup light mayonnaise
  • 1 teaspoon ground cumin
  • 1 cup jicama, peeled, diced
  • 2 - red bell peppers, seeded, diced
  • 2 - orange bell peppers, seeded,diced
  • 2 - 15.25 oz cans, whole kernel corn, drained.
  • 2 - 15 oz cans black beans, rinsed, drained.
  • 1 small jalapeno pepper, chopped.
  • 1 small red onion, chopped.
  • 1 cup bbq sauce

How To Make low-fat chicken pasta salad w/ bbq dressing

  • Step 1
    Place chicken breasts in saucepan over medium-low heat. Pour 1 cup BBQ sauce over chicken, let simmer until no longer pink, about 5-7 min. Cool, dice chicken. Cook pasta as directed, drain, run under cold water. Drain again. In lg bowl, whisk together remaining BBQ sauce w/ mayonnaise until combined. Mix in cumin and diced chicken. Place all other ingredients in bowl and fold gently to combine w/ dressing. Serve warm, or chilled.
