low carb dijon chicken salad
Im definitely not living carb free, but lowering my carb intake has been great for my waistline. This dish was created taking my favorite pieces of other chicken salad recipes. The extra veggies give it crunch and the smoked almonds a nice tang. Enjoy!

Ingredients
- 2 - cooked skinless chicken breasts ( i used rotisserie from the store)
- 1/4 cup mayonnaise, light
- 1/2 cup sour cream, lite
- 1/2 cup dijon mustard
- 1/2 - green pepper, diced
- 1 - cucumber, seeded and diced
- 1/2 cup diced onion
- 1/2 cup smoked almonds, chopped
How To Make low carb dijon chicken salad

Step 1Shred the chicken. Make sure all of the skin is removed.

Step 2Combine all ingredients. Add more of any ingredient you really like. :). I like lots of veggies.

Step 3Season with sea salt and cracked pepper to taste. I have been known to add a sprinkle or two of garlic powder and it adds a little more flavor, but the predominate flavor is dijon and smoked almonds!
