Im definitely not living carb free, but lowering my carb intake has been great for my waistline. This dish was created taking my favorite pieces of other chicken salad recipes. The extra veggies give it crunch and the smoked almonds a nice tang. Enjoy!

    dijon mustard

How to Make Low Carb Dijon Chicken Salad

Step-by-Step

  1. Shred the chicken. Make sure all of the skin is removed.
  2. Combine all ingredients. Add more of any ingredient you really like. :). I like lots of veggies.
  3. Season with sea salt and cracked pepper to taste. I have been known to add a sprinkle or two of garlic powder and it adds a little more flavor, but the predominate flavor is dijon and smoked almonds!
