Low Carb Dijon Chicken Salad

2cooked skinless chicken breasts ( i used rotisserie from the store)
1/4 cmayonnaise, light
1/2 csour cream, lite
1/2 cdijon mustard
1/2green pepper, diced
1cucumber, seeded and diced
1/2 cdiced onion
1/2 csmoked almonds, chopped
How to Make Low Carb Dijon Chicken Salad
- Shred the chicken. Make sure all of the skin is removed.
- Combine all ingredients. Add more of any ingredient you really like. :). I like lots of veggies.
- Season with sea salt and cracked pepper to taste. I have been known to add a sprinkle or two of garlic powder and it adds a little more flavor, but the predominate flavor is dijon and smoked almonds!
