Ingredients
- 3/4 cup low sodium chicken broth
- 1 1/2 tablespoons tomato paste
- 1/4 teaspoon ground black pepper
- 2 tablespoons fresh oregano (or 2 tsp. dried)
- 1/8 teaspoon salt
- 1 clove garlic, minced
- 4 - boneless, skinless chicken breast halves
- 3 tablespoons dried bread crumbs
- 2 teaspoons olive oil
- 2 cups sliced fresh mushrooms
How To Make low carb chicken & mushrooms

Step 1In medium bowl, combine broth, tomato paste, pepper, oregano, salt and garlic. Mix well and set aside.

Step 2Dredge chicken in bread crumbs, coating well. Heat oil in large skillet over medium high heat.

Step 3Sauté chicken in oil for 2 minutes per side, or until lightly browned.

Step 4Add reserved broth mixture and mushrooms to skillet and bring to boil. Cover, reduce heat to low and simmer for 20 minutes.

Step 5Transfer chicken to serving platter. Spoon sauce over chicken and serve. Top with grated parmesan, if desired.
