Ingredients

  • 3/4 cup low sodium chicken broth
  • 1 1/2 tablespoons tomato paste
  • 1/4 teaspoon ground black pepper
  • 2 tablespoons fresh oregano (or 2 tsp. dried)
  • 1/8 teaspoon salt
  • 1 clove garlic, minced
  • 4 - boneless, skinless chicken breast halves
  • 3 tablespoons dried bread crumbs
  • 2 teaspoons olive oil
  • 2 cups sliced fresh mushrooms

How To Make low carb chicken & mushrooms

  • Step 1
    In medium bowl, combine broth, tomato paste, pepper, oregano, salt and garlic. Mix well and set aside.
  • Step 2
    Dredge chicken in bread crumbs, coating well. Heat oil in large skillet over medium high heat.
  • Step 3
    Sauté chicken in oil for 2 minutes per side, or until lightly browned.
  • Step 4
    Add reserved broth mixture and mushrooms to skillet and bring to boil. Cover, reduce heat to low and simmer for 20 minutes.
  • Step 5
    Transfer chicken to serving platter. Spoon sauce over chicken and serve. Top with grated parmesan, if desired.
