3/4 c
low sodium chicken broth
1 1/2 Tbsp
tomato paste
1/4 tsp
ground black pepper
2 Tbsp
fresh oregano (or 2 tsp. dried)
1/8 tsp
1 clove
garlic, minced
boneless, skinless chicken breast halves
3 Tbsp
dried bread crumbs
2 tsp
olive oil
2 c
sliced fresh mushrooms

How to Make Low Carb Chicken & Mushrooms


  • 1In medium bowl, combine broth, tomato paste, pepper, oregano, salt and garlic. Mix well and set aside.
  • 2Dredge chicken in bread crumbs, coating well. Heat oil in large skillet over medium high heat.
  • 3Sauté chicken in oil for 2 minutes per side, or until lightly browned.
  • 4Add reserved broth mixture and mushrooms to skillet and bring to boil. Cover, reduce heat to low and simmer for 20 minutes.
  • 5Transfer chicken to serving platter. Spoon sauce over chicken and serve. Top with grated parmesan, if desired.
