Ingredients
- 4 pounds boneless skinless chicken thighs
- 3/4 cup salsa
- 1/4 cup natural peanut butter
- 2 tablespoons lime juice
- 1 tablespoon soy sauce
- 1 teaspoon fresh grated ginger
- 1/4 cup peanuts, chopped
- 1/4 cup chopped fresh cilantro
How To Make low carb asian chicken

Step 1Season chicken with salt and pepper and put chicken in crockpot

Step 2Combine the remaining ingredients except the peanuts and cilantro, pour over the chicken.

Step 3Cook on LOW about 4-5 hours or until the chicken is no longer pink in the center and is tender

Step 4Remove the chicken from the slow cooker with a slotted spoon

Step 5Skim the fat from the sauce and thicken with corn starch, if desired. Taste for seasoning at this point and adjust if needed. (Adding more salt or pepper as desired)
