This is a staple for my low carb tendencies! However, I love this dumped all over my Cilantro Lime Rice. So flavorful and easy. The aroma while cooking definitely causes some salivating.

The flavors in this easy Crock Pot meal are out of this world. There is a hint of heat from the chili powder, but you really taste the lovely citrus flavor from the lemon and lime. The chicken becomes so tender and juicy. It's guilt free and easy to make... the perfect combination!

Ingredients

  • 3-4 tablespoons chili powder
  • 1-2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon cumin
  • 3-4 pounds chicken thighs, skinless and boneless (chicken breasts don't work well)
  • 1 large onion, cut in wedges
  • 1/4 cup fresh lime juice
  • 1/4 cup fresh lemon juice
  • 4 cloves garlic, minced
  • 1 can diced green chiles (4 oz)
  • - lime zest from 1/2 of a lime

How To Make lime & lemon chili chicken for the crock pot

  • Raw chicken thighs in a Crock Pot.
    Step 1
    Rub the chicken down with the salt and spices and arrange in the Crock Pot.
  • Chicken, onion, and garlic in a Crock Pot.
    Step 2
    Add the garlic, onion, lime zest, and chilies.
  • Juice poured over chicken in Crock Pot.
    Step 3
    Pour juice over all the chicken.
  • Chicken cooking in a Crock Pot.
    Step 4
    Cook on low for 5 hours in your Crock Pot.
  • Shredded chicken on a red plate with rice.
    Step 5
    Top it off with fresh green onion or cilantro. I like to have a spread of sides from tortillas, cilantro-lime rice, sour cream, sauteed zucchini, tomatoes & jalapenos... the flavor possibilities are endless!
