  • 1 Tbsp
    olive oil
  • 1 lb
    boneless, skinless chicken cutlets, cut into chunks
  • 1/4 c
    onion, chopped
  • 1 pkg
    knorr roasted chicken gravy mix
  • 1-2 Tbsp
    lime juice
  • 1/4 tsp
    ginger, minced
  • 2
    green onions, sliced
  • 1/4 c
    shredded coconut, toasted
  • 2 Tbsp
    almonds, sliced and toasted
  • ·
    cilanatro, fresh, chopped - optional

How to Make Lime Coconut Chicken


  1. Heat oil in a large skillet and cook chicken over medium high heat, stirring occasionally until thoroughly cooked. About 5-10 minutes. Remove from pan and set aside.
  2. Add onion and cook one minute. Stir in water, soup mix, lime juice, ginger. Bring to a boil, reduce heat and simmer 3 minutes.
  3. Stir in chicken and green onions. Sprinkle coconut and almonds over chicken. Serve over rice if desired.
