Ingredients
- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken cutlets, cut into chunks
- 1/4 cup onion, chopped
- 1 package knorr roasted chicken gravy mix
- 1-2 tablespoon lime juice
- 1/4 teaspoon ginger, minced
- 2 - green onions, sliced
- 1/4 cup shredded coconut, toasted
- 2 tablespoons almonds, sliced and toasted
- - cilanatro, fresh, chopped - optional
How To Make lime coconut chicken

Step 1Heat oil in a large skillet and cook chicken over medium high heat, stirring occasionally until thoroughly cooked. About 5-10 minutes. Remove from pan and set aside.

Step 2Add onion and cook one minute. Stir in water, soup mix, lime juice, ginger. Bring to a boil, reduce heat and simmer 3 minutes.

Step 3Stir in chicken and green onions. Sprinkle coconut and almonds over chicken. Serve over rice if desired.
