Ingredients

Step 1

zest lemon, juice lemon, marinade chicken in lemon juice (15 mins only...or chicken gets mushy)

Step 2

take zest of the lemons and mash with salt and pepper in a mortar and pestle
Step 3

rub on chicken
Step 4

put in oven and roast for about 45 mins @ 425-450.
