lemon oregano chicken

I like this for a change from the typical barbeque flavors sometimes. This recipe is for the barbeque or outdoor grill. I've seen several different versions of this, and I make my own too. So, here is mine. My family loves it; I hope yours does too.

Ingredients

  • 2 tablespoons freshly squeezed lemon juice
  • 1 tablespoon dried oregano, 2 tbsp chopped, if fresh
  • 2 tablespoons minced garlic (jar) or about 2 cloves pressed
  • 1 tablespoon virgin olive oil or better!
  • 1 1/2 teaspoons sea salt ( i've used kosher, or reg. table salt too, but sea or kosher is better.)
  • 1 teaspoon lemon zest (finely grated lemon peel, no membrane)
  • 8 - chicken drumsticks or 4 chicken breasts or 12 thighs

How To Make lemon oregano chicken

  • Step 1
    Whisk to combine all but the chicken in a small bowl. Salt and pepper to taste.
  • Step 2
    Pour liquid into a 1 gallon zip lock bag. Put chicken in the bag and seal it. Turn the bag over and over to ensure chicken is covered with liquid. Set aside and let soak for about 30 minutes (I have left it sit in the frig. for a day; just make sure to turn it over a few times.
  • Step 3
    Grill chicken on a med. high heat barbeque, turning frequently, until golden brown on all sides (about 1/2 hour) and juices run clear. Serve it up!!
