Lemon Oregano Chicken
2 Tbspfreshly squeezed lemon juice
1 Tbspdried oregano, 2 tbsp chopped, if fresh
2 Tbspminced garlic (jar) or about 2 cloves pressed
1 Tbspvirgin olive oil or better!
1 1/2 tspsea salt ( i've used kosher, or reg. table salt too, but sea or kosher is better.)
1 tsplemon zest (finely grated lemon peel, no membrane)
8chicken drumsticks or 4 chicken breasts or 12 thighs
How to Make Lemon Oregano Chicken
- Whisk to combine all but the chicken in a small bowl. Salt and pepper to taste.
- Pour liquid into a 1 gallon zip lock bag. Put chicken in the bag and seal it. Turn the bag over and over to ensure chicken is covered with liquid. Set aside and let soak for about 30 minutes (I have left it sit in the frig. for a day; just make sure to turn it over a few times.
- Grill chicken on a med. high heat barbeque, turning frequently, until golden brown on all sides (about 1/2 hour) and juices run clear. Serve it up!!
