This is a simple, and very flavorful way to roast a chicken. The skin comes out crisp, and the meat is so tender.

Ingredients For lemon oregano chicken

  • 1 lg
    whole chicken
  • 2 md
    lemons
  • 1/4 tsp
    oregano, dried
  • 2-3 clove
    garlic (optional)
  • 1 pinch
    salt and pepper

How To Make lemon oregano chicken

    Preheat oven to 350 degrees. Rinse chicken and pat dry with a paper towel. Cut the lemons in half. Squeeze the juice of one whole lemon inside the chicken, tucking the lemon halves into the cavity afterwards.

    Squeeze the other whole lemon over the chicken skin. Tuck the lemon halves into the chicken. If using garlic, add it to the chicken's cavity now. (for a mild flavor, leave the garlic clove whole. If you want a stronger garlic flavor, slice it before tucking into the cavity.)

    Sprinkle the chicken with oregano, salt and pepper. Place in a 9x 13 pan. Roast @ 350 degrees for 1 & 1/2 hours. Check to see if the chicken is done. Roast for an additional 30 minutes if needed. Chicken is done when the leg moves easily and chicken has an internal temp of 165 degrees.

    Notes: You can use whatever herb(s) you like. Thyme also works well with the lemon. Rosemary and garlic, too. If you use fresh herbs, tuck some into the chicken cavity. I sometimes use a 9x9 square pan instead of a 9x13. Enjoy!
