lemon herbed baked chicken

If you want something that has alot of flavor and easy to make try this recipe. I use the left overs to make chicken salad, and the lemon and herbs help to give it an awesome flavor. Enjoy!!!

Ingredients

  • 4-6 pounds chicken
  • 1 bunch rosemary sprigs
  • 1 bunch thyme
  • 1 - lemon
  • 1 teaspoon salt
  • 2 cloves garlic
  • 1/2 cup butter or margarine
  • 1/4 cup olive oil, extra virgin

How To Make lemon herbed baked chicken

  • Step 1
    Preheat oven to 400 Wash and pat dry chicken
  • Step 2
    Cut lemon in half, salt and pepper chicken cavity. Place half of lemon within cavity along with a couple of sprigs of rosemary and thyme. Cut a clove of garlic in half and place within cavity of chicken. Fold wings under chicken and tie legs with bakers twine to close cavity of chicken.
  • Step 3
    Slice second half of lemon of slices and place underneath skin of chicken along the breast. Slice second clove of garlic thinly and place it also underneath skin of chicken breast along with lemon. If you prefer, you can also place a sprig of rosemary and thyme under the skin for added flavor. Use the butter and split between both sides of breast and place it under the skin also. This will help to keep the meat tender.
  • Step 4
    Finally use the olive oil to coat the top of the skin, salt and pepper it and place on a rack and in the oven for 1 to 1 1/2hours basting it every 20 minutes.
