This is a light delectable chicken dish that is delicious served with a side of rice such as Five Spice Rice or Jamaican Crazy Rice (recipes posted here) and a big robust green salad.

Ingredients

  • 4 - boneless skinless chicken breasts
  • 1/4 cup flour
  • 1 - garlic clove, minced
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 2 tablespoons fresh lemon juice
  • 1/4 cup dry white wine or vermouth
  • 2 small lemons, thinly sliced
  • 1/4 cup fresh parsley, chopped

How To Make lemon chicken by sallye

  • Step 1
    Blend the flour, garlic, salt and pepper in a shallow bowl. Place the chicken breasts between two pieces of waxed paper. Pound with flat side of mallet until approximately 1/4" thick Dredge the chicken in the flour mixture
  • Step 2
    Heat the oil and butter in a large heavy skillet over medium heat until butter melts. Add the chicken pieces and cook until light brown on both sides. Remove the chicken with a slotted spoon onto a serving platter and cover to keep warm. Reserve the pan drippings.
  • Step 3
    Add the lemon juice and white wine to the reserved pan drippings and stir using a wooden spoon to deglaze the skillet. Return the chicken to the skillet. Add the lemon slices. Cover and simmer over low heat for 30 minutes or until the chicken is cooked through.
  • Step 4
    Remove the chicken with a slotted spoon to a serving platter. Drizzle with the sauce and sprinkle with parsley flakes. To spice the dish up a bit, use chopped fresh cilantro in place of parsley.
