Ingredients
- 1/3 cup olive oil, extra virgin
- 3 tablespoons lemon juice
- 1 tablespoon lemon zest, grated
- 2 cloves garlic minced
- 1 tablespoon dijon mustard
- 1 1/2 teaspoons salt
- 3/4 teaspoon pepper
- 1/3 cup fresh basil
- 1 1/2 pounds chicken breasts, boneless and skinless cut in 1 inch cubes
- 1 - yellow or orange bell peppercut into 1 inch pieces
- 2 small zucchini cut in 1/2 inch thick slices
- 16 small cherry tomatoes
- 8 (12 INCH) BAMBOO SKEWERS
How To Make lemon and basil chicken veggie kebabs

Step 1Combine oil, lemon juice, lemon zest, garlic, mustard, salt, pepper, and basil in a large bowl. Stir in chicken, bell pepper, zucchini, and tomatoes. Cover and refrigerate 2 hours.

Step 2After chicken and veggies have been marinating for 1.5 hours, soak skewersin water for 30 mins.

Step 3Prepare grill for high heat cooking or heat grill pan until very hot.

Step 4Thread chicken and veggies onto skewers. Grill turning occasionally, until chicken is nicely marked and cook through, about 10 minutes. Serve right away.
