This is a fun little recipe that I nabbed from the Atkins Cookbook.

1/3 c
olive oil, extra virgin
3 Tbsp
lemon juice
1 Tbsp
lemon zest, grated
2 clove
garlic minced
1 Tbsp
dijon mustard
1 1/2 tsp
3/4 tsp
1/3 c
fresh basil
1 1/2 lb
chicken breasts, boneless and skinless cut in 1 inch cubes
yellow or orange bell peppercut into 1 inch pieces
2 small
zucchini cut in 1/2 inch thick slices
16 small
cherry tomatoes


How to Make Lemon and Basil Chicken Veggie Kebabs


  • 1Combine oil, lemon juice, lemon zest, garlic, mustard, salt, pepper, and basil in a large bowl. Stir in chicken, bell pepper, zucchini, and tomatoes. Cover and refrigerate 2 hours.
  • 2After chicken and veggies have been marinating for 1.5 hours, soak skewersin water for 30 mins.
  • 3Prepare grill for high heat cooking or heat grill pan until very hot.
  • 4Thread chicken and veggies onto skewers. Grill turning occasionally, until chicken is nicely marked and cook through, about 10 minutes.

    Serve right away.
