This is a fun little recipe that I nabbed from the Atkins Cookbook.

Ingredients

  • 1/3 cup olive oil, extra virgin
  • 3 tablespoons lemon juice
  • 1 tablespoon lemon zest, grated
  • 2 cloves garlic minced
  • 1 tablespoon dijon mustard
  • 1 1/2 teaspoons salt
  • 3/4 teaspoon pepper
  • 1/3 cup fresh basil
  • 1 1/2 pounds chicken breasts, boneless and skinless cut in 1 inch cubes
  • 1 - yellow or orange bell peppercut into 1 inch pieces
  • 2 small zucchini cut in 1/2 inch thick slices
  • 16 small cherry tomatoes
  • 8 (12 INCH) BAMBOO SKEWERS

How To Make lemon and basil chicken veggie kebabs

  • Step 1
    Combine oil, lemon juice, lemon zest, garlic, mustard, salt, pepper, and basil in a large bowl. Stir in chicken, bell pepper, zucchini, and tomatoes. Cover and refrigerate 2 hours.
  • Step 2
    After chicken and veggies have been marinating for 1.5 hours, soak skewersin water for 30 mins.
  • Step 3
    Prepare grill for high heat cooking or heat grill pan until very hot.
  • Step 4
    Thread chicken and veggies onto skewers. Grill turning occasionally, until chicken is nicely marked and cook through, about 10 minutes. Serve right away.
