Ingredients For lemon and basil chicken veggie kebabs

  • 1/3 c
    olive oil, extra virgin
  • 3 Tbsp
    lemon juice
  • 1 Tbsp
    lemon zest, grated
  • 2 clove
    garlic minced
  • 1 Tbsp
    dijon mustard
  • 1 1/2 tsp
    salt
  • 3/4 tsp
    pepper
  • 1/3 c
    fresh basil
  • 1 1/2 lb
    chicken breasts, boneless and skinless cut in 1 inch cubes
  • 1
    yellow or orange bell peppercut into 1 inch pieces
  • 2 sm
    zucchini cut in 1/2 inch thick slices
  • 16 sm
    cherry tomatoes
  • 8 (12 INCH) BAMBOO SKEWERS

How To Make lemon and basil chicken veggie kebabs

    Combine oil, lemon juice, lemon zest, garlic, mustard, salt, pepper, and basil in a large bowl. Stir in chicken, bell pepper, zucchini, and tomatoes. Cover and refrigerate 2 hours.

    After chicken and veggies have been marinating for 1.5 hours, soak skewersin water for 30 mins.

    Prepare grill for high heat cooking or heat grill pan until very hot.

    Thread chicken and veggies onto skewers. Grill turning occasionally, until chicken is nicely marked and cook through, about 10 minutes. Serve right away.
