We've made a change in our household and we're eating only lean proteins along with low carb, low fat and limited calories. This is a recipe I came up with that is really tasty and doesn't make you miss all that heavy mayo you usually get when eating chicken salad. It's clean and fresh tasting. If you're looking for something healthier but aren't wanting to miss out on flavor, give this recipe a try. You won't be disappointed. Regular basil works just as well too! Recipe and photos are my own.

Ingredients

  • 2 - 6 oz. boneless/skinless
  • - chicken breasts, baked and chopped
  • 1/4 cup reduced fat olive oil mayo
  • 1/4 cup chopped, onions
  • 1/4 cup chopped, celery
  • 2 tablespoons chopped, thai basil
  • 2 tablespoons chopped, fresh basil (or 4 tbs all regular if can't find thai basil)
  • 1 or so tablespoon fresh lime juice
  • 1 tablespoon dijon mustard
  • 1 tablespoon fresh cilantro
  • 1/2 teaspoon hot sauce
  • 1/4 teaspoon pepper
  • 1/4 teaspoon garlic powder
  • - lavash bread, fresh spinach, bean sprouts

How To Make lc/lf thai basil lime chicken salad-annette's

  • Step 1
    Combine mayo, mustard, hot sauce, lime juice, pepper and garlic powder. Stir well and set to the side.
  • Step 2
    Chop baked chicken, celery, onions, cilantro, Thai basil and regular basil and place in medium sized bowl.
  • Step 3
    Pour dressing over chicken and veggie mixture and stir well to combine.
  • Step 4
    Serve rolled up in Lavash bread topped with fresh spinach and bean sprouts OR serve over a bed of fresh spinach along with your other favorite fresh veggies. Enjoy!
