Ingredients

  • 1 pound chicken breasts, boneless and skinless
  • 1 can diced tomatoes with garlic and olive oil (15 oz.)
  • 2 - zucchini
  • 1 - green pepper
  • - salt & pepper to taste
  • - vegetable spiral pasta (prepared according to package directions)
  • 1/4 cup black olives chopped
  • 1/4 cup parmesan cheese, grated
  • 2 - 3 dashes oregano

How To Make kitty's low calorie chicken & vegetables

  • Step 1
    Cut chicken into small pieces and cook in large pan over medium-high heat until white
  • Step 2
    Dice zucchini, chop onions and cut peppers into chunks while chicken is cooking
  • Step 3
    Add tomatoes and all fresh vegetables to cooked chicken and cook until vegetables are slightly tender. Do not over cook
  • Step 4
    Season with salt and pepper
  • Step 5
    Serve over pasta and garnish with fresh grated Parmesan cheese, oregano, and sliced black olives according to taste
