Decades ago I had a great recipe for chicken and peaches then somehow lost it. Remembering how much my family loved it I had to come up with a new one. Tried and tested by my loving family it passes as being as good as the one I lost!

Ingredients

2
boneless skinless chicken breasts
1/4 c
brown sugar, divided
1
large fresh peach (sliced)
1/8 tsp
ground cloves
2 Tbsp
lemon juice
2 Tbsp
whole walnuts
1 tsp
corn starch

How to Make Kitty's Baked Chicken and Peaches

Step-by-Step

  • 1Preheat oven to 350 degrees
  • 2Lightly grease a covered casserole dish
  • 3Place chicken breasts in the prepared dish and sprinkle with 1/2 of the brown sugar. Top with peach slices
  • 4In a small bowl, break walnuts into large pieces using your fingers
  • 5Add brown sugar, spices and lemon juice to the walnuts and mix well, then pour mixture over chicken and peaches
  • 6Cover and bake 30 minutes
  • 7Using a slotted spoon plate the chicken, peaches, and most of the walnuts. Cover with foil to keep warm while making the sauce
  • 8Pour drippings into a small sauce pan, add 1 tsp. of corn starch and whisk constantly over medium-high heat.
  • 9Cook until slightly thickened then pour over plated chicken and peaches and serve
