    salsa, tomato-based (fresh)
  • ·
  • ·
    cilantro, fresh
  • ·
    taco chips (if you're not dieting)
  • ·
    light sour cream

How to Make Karen's Mexican Chicken Salad


  1. Slice raw chicken into julienne strips.
    Grill or fry in EVOO
    Season before you grill or fry......

    I use garlic salt, onion salt, salt, pepper, you also may add chili pepper - or pepper to taste.
  2. If you like grilled vegetables, you may add grilled onion and pepper, and jalepeno pepper.
  3. Assemble Salad......
    Avocado (sliced)
    Fresh Onion (sliced thin-if you like)
    Cilantro (diced finely)
    Cucumber - sliced thin
    Salsa (your favorite)
    then sour cream......

    Yummy fiesta chicken salad........
    If you like dressing - add your salsa to some thousand island or pick up your favorite mexican dressing.
    If not dieting - add some sliced cheese...
