I have been fixing this for years, the family love's this. I dreamed it up, one day I wanted to fix something different and I decided that chicken cacciatore sounded good but I didn't care for the recipe I had so I changed it around, and have been making it ever since....

Ingredients
- 3 1/2 pounds chicken (whole, or parts) skin or skinless
- 2 cups flour
- 2 teaspoons salt and pepper (each)
- 2 tablespoons garlic (divided)
- 2 teaspoons italian seasoning
- 1 - bay leaf
- 1/4 cup olive oil, extra virgin
- 2 cans rotel
- 1/4 cup shiraz (wine) (red dry)
- 1 package spaghetti (thin whole wheat cooked)
- - salt and pepper to taste
- - parmesan cheese (each dish)

Step 1Clean chicken for cooking, heat oil in deep skillet, prefer cast iron. Place flour,salt and pepper, 1 tbsp garlic in shaker bag or bowl..

Step 2dredge or shake chicken in flour mixture and brown in skillet. Take chicken and dredge or shaker bag once more and brown again. This help hold in moisture.....

Step 3Spoon out excess oil from skillet and toss...Add both cans of rotel, Shiraz, bay leaf, remainder of garlic (1 tbsp), salt and pepper to taste, cover and simmer for 2 hours, turning occasionally. Serve with Whole Wheat Thin Spaghetti, sprinkle each dish with Parmesan Enjoy
