jicama pico chicken salad
I bought a huge jicama at the store and have been trying to find ways to use it! So for dinner tonight I made this chicken salad which can be eaten on a roll, or with your favorite greens. Also, wrap in a tortilla for an extra southwest flair.

Ingredients
- 1 - cooked boneless skinless chicken breast
- 1/2 cup fresh pico de gallo salsa (not store bought)
- 1/3 cup diced fresh jicama
- 1 teaspoon paula deen house seasoning
- 3 tablespoons mayo (or more depending on how you like it)
- 6 slices roll/bread or tortilla of your choice
- 6 slices sliced smoked gouda cheese

Step 1Dice Chicken Breast. Add pico, diced jicama, house seasoning and mayo: MIX well. Toast your roll with cheese and then top with chicken salad. Or stuff into tortilla or top on fresh greens. Enjoy!
