Jicama Pico Chicken Salad

Laura lee Cloutier

I bought a huge jicama at the store and have been trying to find ways to use it!

So for dinner tonight I made this chicken salad which can be eaten on a roll, or with your favorite greens. Also, wrap in a tortilla for an extra southwest flair.
