italian style fried chicken
I made this on a whim. Had the stuff and a taste for something different. My daughter is home from college for the summer and my husband was home so we all sat down for a family "table" dinner. I served corn on the cob and rice with this chicken. They loved it! Even made sandwiches with the left overs.

- 1/2 cup olive oil, extra virgin
- - salt, pepper and garlic salt (may use powder or fresh garlic)
How To Make italian style fried chicken
-
Step 1Wash and pat dry chicken breasts. Slice each breast into thin pieces, I cut the breasts in a diagnal slice. Start heating your olive oil in skillet.
-
Step 2Mix water and egg with whisk in flat bowl for dipping. Dip each chicken slice in water-egg mixture. Then press in bread crumbs. I salt pepper and garlic salt them now. Then put in heated oil. Fry each piece for a few minutes til golden brown and turn cooking other side same. It is a continuous thing dipping, breading and frying as about one breast sliced will fill most skillets.
-
Step 3Place the done fried chicken slices on a plate covered in a paper towel to absorb excess oil. Keep warm while frying up other breasts.
