My best friend is always begging me to make this. I gave her the recipe, but she says it just doesn't come out the same when she makes it. I think she just doesn't want to cook :)

Ingredients

  • 2-3 teaspoons olive oil, light
  • 2 medium chicken breasts, boneless and skinless, thin sliced
  • 1/2 cup white mushrooms, quartered
  • 1/2 cup unsweetened pineapple tidbits, drained
  • 2 tablespoons dark rum
  • 1/4 cup chicken broth, low-fat
  • 1/2 cup scallions, sliced
  • 2 tablespoons macadamia nuts, chopped

How To Make island chicken

  • Step 1
    In a medium nonstick skillet heat oil; add chicken and cook over high heat until golden, 3-4 minutes on each side. Transfer to plate and keep warm.
  • Step 2
    In same skillet cook mushrooms over medium-high heat, stirring, until browned, about 2 minutes.
  • Step 3
    Add pineapple and stir to combine; stir in rum.
  • Step 4
    Stir in broth and bring mixture to a boil.
  • Step 5
    Reduce heat to low; return chicken to skillet and coat with mushroom-pineapple mixture.
  • Step 6
    Stir in green onions and nuts and cook until thoroughly heated, about 5-8 minutes.
  • Step 7
    Serve with a side of brown rice or couscous.
