My best friend is always begging me to make this. I gave her the recipe, but she says it just doesn't come out the same when she makes it. I think she just doesn't want to cook :)

  • 2-3 tsp
    olive oil, light
  • 2 medium
    chicken breasts, boneless and skinless, thin sliced
  • 1/2 c
    white mushrooms, quartered
  • 1/2 c
    unsweetened pineapple tidbits, drained
  • 2 Tbsp
    dark rum
  • 1/4 c
    chicken broth, low-fat
  • 1/2 c
    scallions, sliced
  • 2 Tbsp
    macadamia nuts, chopped

How to Make Island Chicken


  1. In a medium nonstick skillet heat oil;
    add chicken and cook over high heat until golden, 3-4 minutes on each side.
    Transfer to plate and keep warm.
  2. In same skillet cook mushrooms over medium-high heat, stirring, until browned, about 2 minutes.
  3. Add pineapple and stir to combine; stir in rum.
  4. Stir in broth and bring mixture to a boil.
  5. Reduce heat to low; return chicken to skillet and coat with mushroom-pineapple mixture.
  6. Stir in green onions and nuts and cook until thoroughly heated, about 5-8 minutes.
  7. Serve with a side of brown rice or couscous.
