My best friend is always begging me to make this. I gave her the recipe, but she says it just doesn't come out the same when she makes it. I think she just doesn't want to cook :)

2-3 tsp
olive oil, light
2 medium
chicken breasts, boneless and skinless, thin sliced
1/2 c
white mushrooms, quartered
1/2 c
unsweetened pineapple tidbits, drained
2 Tbsp
dark rum
1/4 c
chicken broth, low-fat
1/2 c
scallions, sliced
2 Tbsp
macadamia nuts, chopped


1In a medium nonstick skillet heat oil;
add chicken and cook over high heat until golden, 3-4 minutes on each side.
Transfer to plate and keep warm.
2In same skillet cook mushrooms over medium-high heat, stirring, until browned, about 2 minutes.
3Add pineapple and stir to combine; stir in rum.
4Stir in broth and bring mixture to a boil.
5Reduce heat to low; return chicken to skillet and coat with mushroom-pineapple mixture.
6Stir in green onions and nuts and cook until thoroughly heated, about 5-8 minutes.
7Serve with a side of brown rice or couscous.
