My best friend is always begging me to make this. I gave her the recipe, but she says it just doesn't come out the same when she makes it. I think she just doesn't want to cook :)

Ingredients
- 2-3 teaspoons olive oil, light
- 2 medium chicken breasts, boneless and skinless, thin sliced
- 1/2 cup white mushrooms, quartered
- 1/2 cup unsweetened pineapple tidbits, drained
- 2 tablespoons dark rum
- 1/4 cup chicken broth, low-fat
- 1/2 cup scallions, sliced
- 2 tablespoons macadamia nuts, chopped
How To Make island chicken

Step 1In a medium nonstick skillet heat oil; add chicken and cook over high heat until golden, 3-4 minutes on each side. Transfer to plate and keep warm.

Step 2In same skillet cook mushrooms over medium-high heat, stirring, until browned, about 2 minutes.

Step 3Add pineapple and stir to combine; stir in rum.

Step 4Stir in broth and bring mixture to a boil.

Step 5Reduce heat to low; return chicken to skillet and coat with mushroom-pineapple mixture.

Step 6Stir in green onions and nuts and cook until thoroughly heated, about 5-8 minutes.

Step 7Serve with a side of brown rice or couscous.
