island breeze chicken
When we go to the island of Cozumel, all you can smell wafting through the air are limes, no matter the time of day or night. When I get home sick to go back and I can't, I have to make some of this Island Breeze Chicken. Tender, juicy, sweet lime. What could be better?

Ingredients
- 6 - boneless, skinless chicken breasts
- 3 tablespoons vegable oil
- 1/2 teaspoon sea salt
- 1/4 teaspoon coarse cracked pepper
- 1/3 cup light corn syrup
- 2 teaspoons lime zest
- 2 tablespoons lime juice
- 1 teaspoon rum flavoring
How To Make island breeze chicken

Step 1Brown chicken well in oil in 12 inch skillet over medium heat. Season with salt and pepper. Combine corn syrup, lime zest, lime juice and rum flavoring. Pour over chicken. Reduce heat, cover and cook over low heat until chicken is tender 20-26 minutes or until done in center.

Step 2Drizzle with a little olive oil before serving.
