This is a recipe I found in an old country cookbook, circa 1959, which I modified slightly. We make meat loaf, ham loaf, why not chicken loaf? It would be delicious with some chicken gravy or even some Dijon mustard. Photo: nevertoomanycooks.blogspot.com

Ingredients

  • 4 cups cooked chicken meat
  • 1 1/2 cups soft bread crumbs
  • 2 - eggs, beaten
  • 1 small onion, diced
  • 2 stalks celery, diced
  • 1/8 teaspoon rosemary
  • 1 pinch marjoram
  • 1 pinch nutmeg
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup sour cream
  • 2 tablespoons chicken broth

How To Make herbed chicken loaf

  • Step 1
    In a large bowl, combine chicken with all the other ingredients and mix well.
  • Step 2
    Pour mixture into a greased 8-1/2x 4-1/2x 2-1/2-inch loaf pan.
  • Step 3
    Bake in a preheated 350-degree oven for 1 hour. Remove and let sit for 5 minutes. Unmold onto a plate and slice.
  • Step 4
    May be served with canned chicken gravy or Dijon mustard drizzled over the top.
