herb chicken with tortellini

I found this recipe on a bag of frozen chicken tenderloins. We had it for dinner last night. It was EASY to make and was a big hit! Served along side a tossed saldad and some garlic bread...Yummy. Try it...you'll like it!

Ingredients

  • 4 cups uncooked sliced chicken breast ( or you could use other parts)
  • 1/2 cup sour cream ( use light if you are watching fat intake)
  • 1/4 cup fresh chopped basil ( make sure you use fresh)
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/8 teaspoon cayenne pepper
  • 2 tablespoons olive oil
  • 3 cloves minced garlic
  • 1 small red bell pepper ( cut in strips)
  • 1/3 cup toasted walnuts
  • 1 package frozen tortellini prepared to pkg directions

How To Make herb chicken with tortellini

  • Step 1
    In a small bowl mix together sour cream, basil oregano, salt and cayenne pepper, set aside
  • Step 2
    In fry pan place oil and heat to med/high. Add chicken and saute about 5 minutes
  • Step 3
    Stir in garlic and red pepper ( I added sliced mushrooms and I suppose you could add peas, broccoli?)
  • Step 4
    Saute, stirring 2 minutes. Reduce heat to low, stir in sour cream mixture and heat thoroughly about 2 minutes.
  • Step 5
    Place cooked tortellini on a serving dish and top with chicken mixture. Sprinkle with walnuts and garnish with fresh basil leaves.
