This is my mothers recipe. She has diabeties and tries to have healthy recipes that are also tasty on hand at all times. I liked this one a lot, so figured I'd share it. Calories: 363 Fat: 4.3 grams Carbs: 47.5 grams.

Ingredients

  • 1 pound whole wheat ziti pasta.
  • 12 ounces cooked, chopped chicken breasts
  • 2 teaspoons butter
  • 1 - chopped onion
  • 1 tablespoon dijon mustard
  • 2 tablespoons whole wheat flour
  • 2 cups reduced-sodium chicken broth
  • 1/4 cup lemon juice
  • 1 - 10 oz pkg frozen peas & carrots, thawed
  • 1/4 cup fresh, chopped parsley.
  • 1/8 teaspoon salt and pepper to taste.

How To Make healthy ziti and chicken

  • Step 1
    Cook pasta as direcetd, drain, keep warm. In lg skillet, warm butter over medium heat. Add onion. Cook until tender. Stir in mustard and flour. Gradually whisk in broth. Bring to a boil. Stir in lemon juice, peas and carrots, and parlsey. Toss pasta w/ chicken and sauce. heat hrough. season w/ salt & pepper.
