My moms recipe, which originally called for crushed cornflakes. I substituted the healthier Total flakes. Either way, it's yummy!

  • 1/4 c
    melted butter
  • 2 Tbsp
    fat-free milk
  • 1 Tbsp
    freeze-dried chives
  • 1/2 tsp
  • 3 Tbsp
    chopped fresh parsley
  • 1/2 tsp
  • 6
    boneless, skinless chicken breasts

How to Make Healthy, crunchy baked chicken


  1. Heat oven to 425. Spray a 9" x 13" baking pan w/ cooking spray.
  2. In a shallow dish, mix 2 tbsp butter, milk, chives, salt and garlic powder. In another shallow dish mix crushed cereal, parsley and paprika.
  3. Dip each chicken breast into milk mix, then coat evenly w/ cereal mix. Place chicken in pan. Drizzle w/ remaining butter. Bake, uncovered for about 20 min, or until no longer pink inside.
