My moms recipe, which originally called for crushed cornflakes. I substituted the healthier Total flakes. Either way, it's yummy!

1/4 c
melted butter
2 Tbsp
fat-free milk
1 Tbsp
freeze-dried chives
1/2 tsp
3 Tbsp
chopped fresh parsley
1/2 tsp
boneless, skinless chicken breasts

How to Make Healthy, crunchy baked chicken


  • 1Heat oven to 425. Spray a 9" x 13" baking pan w/ cooking spray.
  • 2In a shallow dish, mix 2 tbsp butter, milk, chives, salt and garlic powder. In another shallow dish mix crushed cereal, parsley and paprika.
  • 3Dip each chicken breast into milk mix, then coat evenly w/ cereal mix. Place chicken in pan. Drizzle w/ remaining butter. Bake, uncovered for about 20 min, or until no longer pink inside.
