My moms recipe, which originally called for crushed cornflakes. I substituted the healthier Total flakes. Either way, it's yummy!

Ingredients

  • 1/4 cup melted butter
  • 2 tablespoons fat-free milk
  • 1 tablespoon freeze-dried chives
  • 1/2 teaspoon salt
  • 3 tablespoons chopped fresh parsley
  • 1/2 teaspoon paprika
  • 6 - boneless, skinless chicken breasts

How To Make healthy, crunchy baked chicken

  • Step 1
    Heat oven to 425. Spray a 9" x 13" baking pan w/ cooking spray.
  • Step 2
    In a shallow dish, mix 2 tbsp butter, milk, chives, salt and garlic powder. In another shallow dish mix crushed cereal, parsley and paprika.
  • Step 3
    Dip each chicken breast into milk mix, then coat evenly w/ cereal mix. Place chicken in pan. Drizzle w/ remaining butter. Bake, uncovered for about 20 min, or until no longer pink inside.
